Let’s Make Potato Salad!!!

 

To me, there is nothing like a big bowl of potato salad for a summer party, picnic, or BBQ. Such a simple dish and everyone probably has a family recipe. If you don’t, that’s ok cause you are about to get one. And if you have only experienced deli counter potato salad, I’m sorry. I am no stranger to deli counter potato salad and I regret it every time. Probably because I was spoiled with the best. Call me biased but I have tried many and my mom’s recipe outshines them all.

There are so many different versions of potato salad and just as many opinions about the ingredients. Mustard vs. mayonnaise. Miracle Whip vs. mayonnaise. Duke’s vs. Hellman’s. Sour Cream, yay or nay? Pickles or no pickles? Dill vs. Sweet Gherkins vs. bread & butter pickles. Onion or no onion? Eggs or no eggs?

THE BEST potato salad!

 

People always asked my mom for her recipe and she would tell them with a wink that it was a SECRET. They would try to guess what was so special but would come up short on one or two of the ingredients.

 

Again, if you have a favorite family recipe, good for you, TREASURE IT! I love family recipes.

 

She made huge batches for parties, large and small and it was one of my favorite foods during the summer. What wasn’t so fantastic was that it took three days, yes you heard me, three days to make. My mouth would water just waiting for that bowl of creamy potato deliciousness to be ready and it was always worth the wait.

So why does it take that long and is it really that great?

That was part of the secret and YES, it is that good!

The potatoes were cooked and seasoned to perfection so that they held their shape until they softly melted in your mouth in-between crunchy bites of chopped celery and green onion. The dressing was a creamy blend of mayonnaise and sour cream with a hint of fresh, crisp horseradish and the zip of French’s mustard.

I have been known to make this quick version but my mom’s 3-day version is way better.
