Serves 4 people

  • 1 lb large shrimp, peeled & deveined
  • 1 teaspoon salt
  • 1 teaspoon dried crushed red pepper flakes
  • 3 tablespoons olive oil, plus 1-2 T
  • 1 medium onion, sliced
  • 1 – 14 ½ oz can diced fire-roasted tomatoes
  • 1 cup dry white wine
  • 3 cloves garlic, chopped
  • ¼ teaspoon dried oregano
  • 3 tablespoons fresh Italian Parsley, chopped
  • 3 tablespoons fresh basil leaves, chopped
  • 1 lb pasta, cooked al dente 

Shrimp Fra Diavolo Preparation

  1. Toss the shrimp in a medium bowl with salt and red pepper flakes. Heat the 3 tablespoons of oil in a heavy large skillet over medium-high heat.
  2. Add the shrimp and sauté for about a minute, toss, and continue cooking until just cooked through, about 1-2 minutes.
  3. Transfer the shrimp to a large place; set aside.
  4. Add the onion to the same skillet, adding 1-2 teaspoons of olive oil to the pan, if necessary, and sauté until translucent, about 5 minutes.
  5. Add the tomatoes with their juices, wine, garlic, and oregano.
  6. Simmer until the sauce thickens slightly, about 10 minutes.
  7. Return the shrimp to the  pan; toss to coat, and book for about a minute so the flavors meld together. 
  8. Stir in the parsley and basil. Season with salt to taste and serve over pasta.
