Shrimp Étouffée

Serves 4-6 people
Ingredients
- 1 Stick Unsalted Butter
- 2 Medium Onions Chopped
- 1 Celery Rib Chopped
- 3 Garlic Cloves Minced
- 1 ½ teaspoons Jalapeno minced
- 2 Tablespoons Flour
- 1 14oz Can Peeled Chopped Tomatoes
- 1 Tablespoon Paprika
- ½ Teaspoon Salt
- ½ Teaspoon Pepper
- Pinch Cayenne
- 2 lb. Medium Shrimp Peeled & Deveined
- 4 Scallions Chopped
- ½ Cup Parsley Chopped
- Rice Cooked
Preparation
- Melt Butter in Dutch oven or large pan
- Add onion and celery. Sauté over medium heat until translucent, 8-10 minutes. Add garlic and continue cooking for 2-5 minutes.
- Start Rice.
- Add flour to onion, celery, garlic, stir 3-5 minutes
- Add tomatoes, paprika, salt & pepper, cayenne. Simmer for 5 minutes.
- Add Shrimp and cook 4-6 minutes until shrimp is cooked through.
- Add Scallions & Parsley Serve over Rice.
