Sausage Meatloaf

Sausage Meatloaf

Ready in 20 minutes
Serves 8 people

Ingredients

  • 2 tablespoons olive oil
  • 1 cup yellow onion, chopped
  • 1 cup celery, chopped
  • 6 cloves garlic, minced
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 12 tablespoons ketchup, divided
  • ½ cup fresh parsley, chopped
  • 2 tablespoons Worcestershire sauce
  • ¼ teaspoon salt
  • 1 teaspoon ground pepper
  • 1 lb lean ground beef
  • 1 lb  ground pork
  • 1 lb  Italian sausage

Preparation

  1. Preheat oven to 350℉. Line cookie sheet with aluminum foil, folding edges to create sides.
  2. Heat oil in large skillet over medium high heat. Add onion and celery; cook, stirring occasionally until tender, 5-10 minutes. Add garlic and cook, sitting for 1 minute more. Transfer to a large bowl and spread into a thin layer to let cool about 5 minutes
  3. Once onions are cooled, add eggs, breadcrumbs, 6 tablespoons ketchup, parsley, Worcestershire, salt and pepper. Stir to combine. Add beef, pork, and Italian Sausage; mix with hands to combine. Divide in half.
  4.  Create two loaves and place on the prepared cookie sheet. 
  5. Bake until the thermometer reads 160℉, 40-45 minutes.
  6. Brush meatloaves with remaining ketchup. Turn broiler to high and broil until ketchup bubbles. 3 minutes or so. Keep an eye on them.
  7. Let stand 10-15 minutes before serving. Once the second one is cool. Wrap up for the freezer.

Tips

This is a double recipe so you can have one in the freezer.

Use leftovers for Patty Melts, Sandwiches, or Quesadillas.
