Orzo Salad with Scarlet Runner Beans

Orzo Salad with Scarlet Runner Beans brings a whole new level to pasta salad. Beans are a great source of protein and a terrific way to create a hearty meal.

Orzo Salad with Scarlet Runner Beans

I had stocked my pantry with dried beans like garbanzo and kidneys and added these Scarlet Runner Beans to my order. They are plump and flavorful and really made this dish complete. You can substitute kidneys for this recipe.

Orzo Salad with Scarlet Runner Beans

Ready in 20 minutes, plus overnight soaking
Serves 12 people

 

Ingredients

  • 1 cup dried beans, I used Scarlet Runner from https://www.northbaytrading.com/
  • ½ lb fresh green beans, cut ¾ “ pieces
  • 1 cup orzo
  • 4 Tablespoons olive oil, divided
  • 1/ 2 cup red onion, chopped
  • 1 cup grape tomatoes, halved
  • 1 clove garlic, minced
  • ¼ cup pine nuts, toasted
  • 1 lemon, zested and juiced
  • 1 ½ teaspoons Oregano https://www.penzeys.com/
  • 1 ½ teaspoons sea salt
  • ½ teaspoon fresh ground black pepper
  • ½ cup crumbled feta (Optional)

Preparation

  1. Soak & Cook beans as directed on the package or in an Instant Pot or Quick Cooker  For Scarlet Runner Beans, you will want to soak overnight before cooking in Quick Cooker. Drain & Set aside.
  2. In a large bowl, prepare an ice bath. Bring med-large pan of water to boil. Add green beans and cook for 30-60 seconds. With slotted spoon, transfer to ice bath. Drain & set aside.
  3. Bring water back up to boil and salt water. Add orzo and cook 9 minutes. Drain and set aside.
  4. In large skillet, heat 2 tablespoons oil over medium heat. Sauté onion for 2 minutes. Add garlic for 30 seconds and remove from heat.
  5. Combine green beans, runner beans, orzo, onion & garlic, pine nuts. 
  6. Add 2 Tablespoons of oil, lemon zest and juice, and oregano. Salt and pepper to taste.
  7. You can serve this right away or chill for next day. Add feta just before serving.
