Mexican Ceasar Salad
Mexican Caesar Salad is a spicy twist on the classic Caesar. Put Mexican Caesar Salad in your Taco Tuesday rotation to keep meals from being boring.
Mexican Caesar Salad
Ready in 15 minutes
Serves 4 people
Salad Ingredients
- 5-6 cups romaine lettuce, chopped, rinsed & spun dry
- ⅓ cup cotija cheese or feta
- ½ cup fresh tomatoes, diced
- 1 avocado, pitted & diced
- 1 cup canned black beans, rinsed & drained
- ½ cup tortilla chips, lightly crushed
- ¼ cup pepitas
- ½ lime juice
Salad Ingredients
- 1 can mild green chilies, diced
- 1 clove garlic, minced
- 3 tablespoons cotija cheese or feta
- ¼ teaspoon black pepper
- ½ teaspoon salt
- ½ lime juice
- 1 teaspoon honey or agave
- ⅓ cup olive oil
- 1 tablespoon red wine vinegar
- ¾ cup cilantro leaves*
- 3 tablespoons sour cream or plain greek yogurt
Preparation
- Place all the the dressing ingredients in a blender or food processor and blend until smooth. If too thick, add a tablespoon of water. Taste and season with S & P.
