Garlic Herb Chicken Salad

Garlic herb chicken salad is a perfect recipe for leftover rotisserie chicken. This chicken salad is great for on-the-go meals, too.

 
 

Garlic Herb Chicken Salad

Ingredients

  • Leftover Garlic & Herb Rotisserie Chicken
  • ¼ cup Mayo
  • 1 tsp. Dijon Mustard
  • 1 tsp. Garlic & Herb Rub
  • ¼ cup Celery, diced
  • Salt & Pepper to taste

Preparation

  1. Remove chicken meat from bones if you haven’t already. Chop.
  2. In a medium bowl mix mayo, Dijon mustard, Garlic & Herb rub, and chopped celery.
  3. Add chicken and fold together. Adjust mayo and seasoning. 
  4. Serve with lettuce & tomato on multi-grain bread or on a bed of greens.

Tips

Having a friend for lunch? Serve on fresh croissants with a Rosé or Sauvignon Blanc alongside an Arugula Salad.
