  • 1 lb. Ground Beef, Lamb, or Turkey
  • Salt & Pepper
  • ½ large red onion, chopped
  • 1 ½  teaspoons dried oregano
  • 1 ½ teaspoons Za’atar seasoning (optional)
  • 3-4 cloves garlic
  • 1 tablespoon tomato paste
  • 3 tablespoons red wine vinegar or dry red wine

Condiment Side Ingredients

Tzatziki Sauce
  • 1 English cucumber, chopped
  • 1 clove garlic, minced
  • 2 teaspoons dried mint or 1 tablespoon fresh
  • 1 cup whole-milk plain Greek yogurt
  • ½ cup crumbled feta cheese
  • Salt to taste
Tomato & Cucumber
  • 1 tablespoon olive oil
  • 1 tablespoon red wine vinegar
  • 2 tomatoes, diced
  • 1 English cucumber, diced
  • ½ red onion, diced
  • Pepper to taste

4-6 Greek Pitas or Tortillas

Preparation

  1. You can prep this a day ahead or an hour ahead. If you are really planning things out, you can double the batch and freeze half. You can also prepare the condiments ahead of time.
  2. For the tomato & cucumber: Toss olive oil, vinegar, tomatoes, cucumbers and onion in a bowl. Season to taste, set aside.
  3. For the Tzatziki: seed and dice the cucumber. Add cucumber to a fine mesh strainer. Salt the cucumber and let sit for 10-15 minutes. Squeeze out any excess moisture. Add the cucumber to bowl with yogurt, feta, garlic and mint. Season to taste.
  4. For the meat: in a large skillet, heat oil over medium-high heat. Add meat, salt & pepper. Leave it alone for a few minutes to get it browned. After it has started to brown, you may break it up and continue cooking, about 10-12 minutes. Once browned, remove meat to a seperate bowl, reserving juices in pan. Lower heat and sauté onions, about 2-3 minutes. Add oregano, Za’atar, and garlic, cook another minute. Season. Add tomato paste and cook 3-5 minutes. Deglaze pan with red wine vinegar, getting all the wonderful bits scraped up.  Add the meat back to the pan, stir and keep warm.
  5. You can keep meat warm in a slow cooker if serving for a party.
  6. Warm pitas in a Tortilla Warmer or heat a heavy skillet with a drizzle of olive oil and heat pita on each side for 20 seconds.
  7. Serve with sides and extra feta.
