Garlic Herb Chicken Salad
Garlic herb chicken salad is a perfect recipe for leftover rotisserie chicken. This chicken salad is great for on-the-go meals, too.
Garlic Herb Chicken Salad
Ingredients
- Leftover Garlic & Herb Rotisserie Chicken
- ¼ cup Mayo
- 1 tsp. Dijon Mustard
- 1 tsp. Garlic & Herb Rub
- ¼ cup Celery, diced
- Salt & Pepper to taste
Preparation
- Remove chicken meat from bones if you haven’t already. Chop.
- In a medium bowl mix mayo, Dijon mustard, Garlic & Herb rub, and chopped celery.
- Add chicken and fold together. Adjust mayo and seasoning.
- Serve with lettuce & tomato on multi-grain bread or on a bed of greens.
Tips
Having a friend for lunch? Serve on fresh croissants with a Rosé or Sauvignon Blanc alongside an Arugula Salad.
