Collards
Collard greens are a healthy and hearty side dish, and even more delicious when you sauté them in garlic!

Serves 6-8 people
Ingredients
- 1 Tablespoon Olive Oil
- 3 slices bacon
- Ham hock
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon Smoked Paprika
- 1 teaspoon Galena Street Seasoning*
- 3 cups chicken broth
- 1 lb. collard greens, ribs removed, soaked, cut in 2” strips
- 1-2 teaspoons Liquid Smoke
- Hot sauce
Preparation
- Heat oil in a large saucepan and cook bacon. Remove bacon to drain.
- Add onion to the pan and sauté for 5 minutes.
- Add garlic, sauté 1 minute.
- Add ham hock, broth, spices, liquid smoke, and salt & pepper to taste.
- Simmer for 20 minutes
- Add greens let wilt, cook to desired doneness.
