Collards

Collard greens are a healthy and hearty side dish, and even more delicious when you sauté them in garlic!

Ready in 30 minutes
Serves 6-8 people

Ingredients

  • 1 Tablespoon Olive Oil
  • 3 slices bacon
  • Ham hock
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Galena Street Seasoning*
  • 3 cups chicken broth
  • 1 lb. collard greens, ribs removed, soaked, cut in 2” strips
  • 1-2 teaspoons Liquid Smoke
  • Hot sauce

Preparation

  1. Heat oil in a large saucepan and cook bacon. Remove bacon to drain.
  2. Add onion to the pan and sauté for 5 minutes.
  3. Add garlic, sauté 1 minute.
  4. Add ham hock, broth, spices, liquid smoke, and salt & pepper to taste.
  5. Simmer for 20 minutes
  6. Add greens let wilt, cook to desired doneness.
