Pizza Friday

Pizza is the best way to celebrate Friday night and the end of the work week! 

Pizza Friday

Ready in 20 minutes
Serves 8 people

Ingredients

  • 1 dough ball
  • Regular or Spicy Italian sausage
  • 1 Red or Orange bell pepper
  • Olive Oil
  • 2-3 tablespoons pizza sauce
  • Garlic Powder
  • Red Pepper Chili Flakes (optional)
  • Pizza Seasoning
  • Mozzarella Cheese
  • Arugula

Preparation

  1. Pre-heat grill.
  2. Brown sausage, drain on paper towel. 
  3. Char pepper on grill, turning to get all sides toasty (and yes, even blackened). Set aside.
  4. Divide dough ball in 4 equal parts. Roll out each on a floured surface to approximately 8” round. These do not need to be perfect. 
  5. Brush dough with olive oil on both sides. Sprinkle with garlic, Pizza seasoning, and chili flakes. 
  6. Carefully place on grill. You may need to do these in batches depending on your grill size. Cook 2-3 minutes and turn over for another 2-3. Remove to cookie sheet and continue with remaining dough.
  7. Peel & de-seed pepper, cut into strips.
  8. Brush now cooked dough with pizza sauce. Top with sausage, pepper strips and mozzarella.
  9. Place pizzas back on grill, preferably off direct heat, until cheese melts.
  10. Top with arugula and enjoy.  

Tips

If you are like my husband and don’t like the hot things touching the cold things, serve the arugula as a side salad with a nice lemon vinaigrette and some grape tomatoes.
